Essential Fatty Acids are those which cannot be synthesized by us

Those fatty acids such as alpha linolenic acid commonly known as ALA (an omega 3 fatty acid) as well as linoleic acid also commonly known as LA (an omega 6 fatty acid) are known as essential fatty acids because it takes desaturated enzymes to produce them and due to a lack of them the human body cannot synthesize or manufacture those necessary fatty acids by itself. Yet they are vital to our health in many ways. Some varieties of the essential fatty acid family such as arachidonic acid can be synthesized from the LA or linoleic fatty acid. These are polyunsaturated fatty acids also known as PUFA and that means they have more than one double bond in between its carbons or simply put, they are not merely simple fatty acids but considered multiples (poly) as in polyunsaturated. Those are the kind that is considered good for our body. The saturated fatty acid along with some monounsaturated fatty acids are found to be lacking in certain enzymes and build up in our body, blocking arteries and causing elevated cholesterol levels which can be extremely harmful to us, particularly our cardiovascular system.
